THE ESSENTIALS

How To Boil Water
For those who don't know their way around the kitchen, this is a fun place to begin. Like all of our courses, this class is recipe driven. This means that you will learn the very basic techniques that are the foundations for all cooking, and you will do so by learning easy to follow recipes.

Classic French : The Bistro
There are many restaurants in our great city that consider themselves to be French Bistros. This class focuses on the classic French bistro preparations, the staples that you can find on every bistro menu in Paris.

Regional Italian Cuisine
For people who have had the good fortune of spending time in Italy, it is clear that the food there is quite different than that which we label Italian food here. This class takes you on a culinary adventure around the regions of Italy using authentic recipes as your guide to enlightenment.

The Italian-American Table
Before WWI the largest population of European immigrants to the United States was Italian. Since that time the many generations of Italian-Americans have developed a cuisine, rich, both in flavor and tradition. This genre has found a permanent place in the historical culinary tradition of this country. This class focuses on those recipes that we all know and love as basic Italian-American cuisine.

Regional French Cuisine
French food is not a term that describes one monolithic national cuisine. Rather, it is made up numerous cuisines specified by the regions from which they come. While this class is an overview of the regionality of French cuisine, the recipes we will focus on will come from a selection of several of the many regions, including Lyon, Gascony, Provence, and Normandy.

Concepts For The Busy New Yorker
It is 6:30PM or unfortunately for you, even later, and you are just getting home from a grueling day of work. The rat race has surely taken its toll, and you are famished. The last thing you want to do is spend more than a few minutes toiling away in your kitchen. In this class you will learn how to cook quick and easy meals that beat ordering in from the local greasy spoon. So, retire your ever growing pile of delivery menus, and take this class. In addition to the simple recipes we offer to you, you will also learn to use your freezer and refrigerator to your advantage so that you can spend as little time as possible in your kitchen.

Advanced Cooking Methods: Braising, Roasting, Sauteing, Grilling and Frying
This class is designed for the more experienced home cook. It does not focus on a specific cuisine. The recipes you will cook in this class are designed as perfect examples of the techniques used in all cooking. Braising, roasting, sauteing, grilling, and frying can all be a bit daunting without proper know-how. With this class, you will make tender, juicy, tasty food the way it is supposed to be done.

Around The Great Asian Continent
Chinese? Thai? Japanese? Vietnamese? Asian Fusion? Which is your favorite? Each of these cuisines was at one time exotic to our palates. With the onslaught of restaurants peddling the flavors of the far east, the exotic has become just another tasty option. With this class, the wide range of Asian ingredients and special cooking methods, will lose their mystery, becoming just another tasty option on your cooking repertoire.

Hors-d’oeuvres and Canapés
Whether you need some small bites for a cocktail party, or you are looking for some impressive ideas to amuse and awaken your guests' palates before a dinner or luncheon party, this is the class for you. From pigs in a blanket to oysters with caviar, and everything in between, you will have a great time cooking and eating these small bites designed to keep you coming back for more!!!

Party In The Hamptons
While all of our classes are taught using seasonal menus, this is the only class that we offer in the summer months only. There is nothing quite like a party at someone's home in the Hamptons. This class focuses on all of the fresh flavors of the summer. Meat, fish, and seafood will sizzle on the grill, salads with the freshest ingredients will be beautifully composed, and libations will be mixed to create summery concoctions. This party is the perfect Hamptons shindig celebrating the flavor, color, aroma, and atmosphere of summer.

The Celebrated Clam Bake
Much more than just clams, the clam bake is one of the most fun and tasty celebrations of the summer. All parts of a classic clam bake are available all year round, and why not bring the beach into your apartment? In this class, you will learn to cook, assemble, and celebrate the aroma and flavor of the beach at any time, in any place!

Regional Barbecue
Memphis, Kansas City, Dallas, and the Carolinas each have their own definition of barbecue. They also all claim to have the best brand of it. This class allows you to be the judge. When we here the word 'Barbecue' the first thought is grilling outside in the summer. Weather and equipment permitting, we do offer this class outside. But what do you do when you crave these smoky flavors in the off-season? In this class, the barbecue comes inside for you to re-create the flavors of the summer at any time of year!

The Mexican Fiesta
The bold flavors found 'south of the border,' are not only exciting to cook with, but they also evoke the feeling of a party in your mouth. The freshness of cilantro, the smooth richness of ripe hass avocados, the mild saltiness of queso fresco, and the heavenly marriage of fresh corn and black beans are just a few of the building blocks of this vacation for your taste buds. Add to the mix some cerveza, we bring you a true cooking party!

Fun In The Kitchen! Parties For Kids
As you can read in my bio on the following page, I began cooking at a very young age. All of us here at Pete's Eats are very disturbed by kids' eating habits in this country. We are committed to doing what we can to make a difference. Getting kids interested in food and cooking, and teaching them the right way to eat is the first step to ensuring their health in the future. Cooking is a whole lot of fun, and we want kids to feel welcome in the kitchen, to have fun in the most important room in the house.Our cooking parties for kids are an excellent idea for a birthday party. While we love doing these parties for kids, we also love the idea of cooking being a family activity. We also offer these parties to parents and kids together so that parents can learn how to involve their kids in the cooking process.
